A punchy Tahini Lemon Dressing turns crisp lettuce, crunchy veggies, and juicy chicken into a feast.

For one serving of salad:

  • 2 cups raw salad greens or cold steamed spinach or other greens
  • 1 cup shredded cabbage or kale
  • 1 cup raw or cooked veggies
  • 4 oz. cooked chicken, tofu, or shrimp
  • a few leaves of mint, basil, and/or cilantro
  • 3 Tbs. Tahini Lemon Dressing (see recipe)

Tahini Lemon Dressing

Time: 5 minutes
Makes: 15 Tbs.

Ingredients

  • ¼ cup extra-virgin olive oil
  • ¼ cup tahini
  • ¼ cup fresh lemon juice
  • 1 clove garlic, finely minced
  • 1 tsp. ground coriander
  • 1 tsp. kosher salt

Instructions

Whisk ingredients with 2 Tbs. water until smooth and glossy.
