Ingredients

  • 1 Tbs. extra-virgin olive oil
  • ½ lb. mushrooms, chopped
  • 1½ Tbs. reduced-sodium soy sauce
  • 1 bunch scallions, chopped
  • 2 cups cooked farro
  • 3 Tbs. cream cheese

Instructions

  1. In a large pan over medium-high heat, heat the oil until shimmering. Sauté the mushrooms until browned, 5-7 minutes. Season with the soy sauce.
  2. Stir in the scallions and farro. Remove from the heat and add the cream cheese, stirring to melt and combine.
