Ingredients
- 1 Tbs. extra-virgin olive oil
- ½ lb. mushrooms, chopped
- 1½ Tbs. reduced-sodium soy sauce
- 1 bunch scallions, chopped
- 2 cups cooked farro
- 3 Tbs. cream cheese
Instructions
- In a large pan over medium-high heat, heat the oil until shimmering. Sauté the mushrooms until browned, 5-7 minutes. Season with the soy sauce.
- Stir in the scallions and farro. Remove from the heat and add the cream cheese, stirring to melt and combine.
