The taste of Marsala wine is similar to white port or sherry, so any of the three will work in this Chicken in Mushroom Sauce. Fortified, barrel-aged wines like these add a deep, rich taste and light sweetness to recipes, and their higher alcohol content means they’ll last for ages. 

Tip: You can replace the wine with ½ cup chicken stock plus the juice of half a lemon.

Ingredients

  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1 tsp. + 2 tsp. + 1 Tbs. extra-virgin olive oil
  • 4 pieces thin-sliced boneless, skinless chicken breast
  • 6 oz. small mushrooms (any kind), quartered
  • ½ cup dry or medium marsala wine (see headnote)
  • 1 Tbs. flour
  • 1 cup chicken stock (preferably homemade), more if needed
  • ½ tsp. kosher salt
  • freshly ground black pepper

Instructions

  1. In a small bowl, mix the shallot and garlic with 1 tsp. oil.
  2. In a large heavy pan over medium-high heat, heat 2 tsp. oil until shimmering. Sauté the chicken until lightly browned on one side, 2–3 minutes. Turn the chicken over and cook for 30 seconds. Remove from the pan.
  3. In the same pan, add the remaining 1 Tbs. oil. Sauté the mushrooms until lightly browned, 3–5 minutes. Remove from the pan with a slotted spoon, leaving as much oil behind as possible.
  4. Add the shallot-garlic mixture to the pan and cook, stirring, for 30 seconds. Stir in the marsala and let reduce by half.
  5. In a small bowl, whisk the flour with 2 Tbs. chicken stock. Add the remaining chicken stock, salt, and pepper to the pan, then whisk in the flour mixture. Simmer until the sauce thickens, 4-5 minutes, adding more stock if needed. 
  6. Reduce the heat to low. Return the mushrooms and chicken, browned side up, with any juices to the pan. Gently simmer until warmed through, about 1 minute.
