Ingredients

  • 2 lbs. sliced sweet potatoes (orange and/or purple)
  • 2 Tbs. olive oil
  • ½ tsp. smoked paprika
  • ½ tsp. cumin
  • ¼ tsp. kosher salt

Instructions

  1. Preheat the oven to 425°F.
  2. On a lined rimmed baking pan, toss the potatoes with the oil, spices, and salt.
  3. Roast until tender, 20-30 minutes.
