This Summer Strawberry Salad couldn't be simpler. It's perfect when fresh-picked berries are at their peak.

Serves: 4

Ingredients

  • 2 Tbs. plain yogurt
  • 1 Tbs. extra-virgin olive oil
  • 1 Tbs. white balsamic vinegar
  • 2 tsp. dijon mustard
  • ¼ tsp. salt
  • 8 cups salad greens
  • ½ cup sliced strawberries
  • ½ cup sliced cucumber

Instructions

  1. In a small bowl, whisk together the yogurt, oil, vinegar, dijon, and salt.
  2. In a large bowl, toss the salad greens, strawberries, and cucumber together.
  3. Spoon the dressing over the salad.
